The Watkins family, owners of Castle House, has a beautiful working farm at its Ballingham Hall home, on the outskirts of Hereford. The family has lived and farmed here for over 140 years. Very much a working farm, it is mainly arable with grazing for the family's pedigree herd of Hereford cattle.
With everyone concerned these days as to where their food comes from, the Watkins' were determined to start a kitchen garden from the day they bought the hotel. Colin Brown, who also looks after the hotel's pretty waterside garden, established a number of raised beds for all the vegetables, salads and herbs and an extensive fruit cage for the large variety of berries. The farm also has many apple and pear orchards.
The fruit, vegetables, herbs and salads for the hotel's restaurant's seasonal menus have been grown, whenever possible, at Ballingham Hall and deliveries are made most days to Head Chef Gabor Katona's kitchen.
